1 cup peeled, cubed, cooked butternut squash
.5 cups sliced kielbasa sausage
Salt and pepper
- Toss. Toss the cubed butternut squash in olive oil. Sprinkle rosemary, oregano and salt and pepper on top. Set aside.
- Pan Fry. Heat pan on medium heat and add sliced kielbasa sausage. Brown on both sides. Add butternut squash to pan and lightly fry. When squash and sausage are browned to your liking, set aside on plate.
- Fry Again. Personally, I like to make my egg over easy or over medium so the yolk can mix with the squash and sausage. Cook the to your liking. Place on top of the squash and sausage.
